Ohitsu - 伝統的な日本の米びつ
おひつは、炊いたご飯を炊飯器から出して、美味しく食べられる状態に保つために使われる伝統的な容器です。この容器は、木曽地方の「椹（さわら）」と呼ばれる木材で作られ、職人によって伝統的な製法で手作りされています。美しい柾目模様と銅の装飾が、洗練された外観を与えています。この種類の木材は、古くから「飯切（半切）」や「おひつ」などの日本の伝統的な調理器具に使用されており、調理器具の木材として高い評価を得ています。
天然の椹の木は、他の種類の木よりも多くの樹脂を含んでいます。そのため、耐水性と耐久性に優れており、天然の抗菌効果も発揮します。おひつには、「江戸櫃」と「乗せ櫃」の2種類があり、違いは蓋の形状です。
使用とお手入れ
おひつに使用されている木材は、ご飯から不要な水分を吸収し、べたつかず柔らかく保ちます。ただし、樹脂が表面に染み出してくることがありますが、自然由来の成分であり、黄色っぽく、べたつきがあり、シミのような外観ではありますが無害です。酢またはエタノール液（消毒用アルコール）で拭き取ることができます。使用後は、（熱い）水で十分に洗い、食べ物の残りがないようにしてください。食べ残しがあると黒ずみの原因となります。洗った後は、十分に水を切り、乾いた布で拭き、直射日光の当たらない、風通しの良い涼しい場所で乾燥させてください。食器洗い機には対応していません。
