おひつ：日本の伝統的な木製容器
おひつは、炊飯器で炊いたご飯を新鮮に保つために伝統的に使用される、かぶせ蓋付きの木製容器です。容器はご飯から余分な水分を吸収し、柔らかく、べたつかない状態を保ちます。木曽地方で採れる「椹（さわら）」と呼ばれる木材を使用して手作りされています。この種類の木材は、柾目（まさめ）模様と銅の装飾が特徴で、洗練された外観を与えます。 椹の木は、他の種類の木材よりも樹脂を多く含むことが知られており、耐水性と耐久性に優れています。また、天然の抗菌効果があり、古くから「飯切（はんだい）」や「おひつ」などの日本の伝統的な調理器具を作るために使用されてきました。 おひつには、「江戸櫃」と「能瀬櫃」の2種類があり、蓋の形状が異なります。おひつを最高の状態に保つためには、使用後によく（熱い）水で洗い、直射日光を避け、涼しく風通しの良い場所で乾燥させることをお勧めします。また、乾燥させる前に残った水分を拭き取ることが重要です。そうしないと、木材が収縮してひび割れが発生したり、銅の装飾が緩んだりする可能性があります。食器洗い機には対応していません。また、樹脂が染み出し始めた場合は、容器の表面を酢またはエタノール液（消毒用アルコール）で拭くことをお勧めします。 株式会社ヤマコーは、1972年に岐阜県中津川市で創業した家族経営の会社です。創業以来、伝統的なおひつを作り続けており、江戸時代と同じ技術を今も受け継いでいます。
