The Steel Used Is Shirogami, Also Known As White Paper Steel, Made With Iron Sands From Yasugi By Hitachi Metals Yasugi Works. This High-Quality Steel Is Ideal For Creating Quality Knives. When Not In Use, Be Sure To Keep The Knife Dry. Jikko Is A Traditional Knife-Maker, Established In 1901 In Sakai City, A Place Renowned For Its Skilled Knife-Makers. Sakai Blacksmiths Are Famous For Their High-Quality Kitchen Knives, And Are Said To Supply 90% Of The Knives Used By Professional Chefs In Japan.
