Ohitsu - A Traditional Japanese Rice Container

The Ohitsu Is A Traditional Container Used To Keep Steamed Rice Out Of Rice Cookers In Good Condition To Eat. The Container Is Made Of Wooden Material From The Kiso Region, Called “Sawara”, And Handmade By Professionals In A Traditional Method. The Beautiful Masame (Straight-Grain) Pattern And Copper Ornamentation Grant It With Sophisticated Appearance. This Type Of Wood Has Been Used For Japanese Traditional Cooking Tools Such As “Hangiri (Handai)” And “Ohitsu” Since Ancient Times And Has Earned A Good Reputation As A Wood Material For Kitchen Tools.

The Naturally Grown Sawara Wood Contains More Resin Than Other Types Of Trees. This Makes It More Water-Resistant And Durable, While Also Providing Natural Antibacterial Effects. There Are Two Types Of Ohitsu, “Edobitsu” And “Nosebitsu”, And The Difference Is The Shape Of The Lid.

Use And Care

The Wood Material Used For The Ohitsu Allows It To Absorb Unwanted Moisture From The Rice To Keep It Non-Sticky And Soft. However, Resin Can Sometimes Ooze Out On The Surface, And While It Is A Natural Ingredient And Harmless Despite Its Yellowish, Sticky And Stain-Like Appearance, Vinegar Or Ethanol Liquid (Sterilizing Alcohol) Can Be Used To Wipe It Off. After Use, It Should Be Sufficiently Washed With (Hot) Water To Make Sure There Isn’T Any Bit Of Food Left, Which Can Cause Black Stains. After Washed, It Should Be Well-Drained, Wiped With A Dry Cloth And Dried In Cool, Well-Ventilated Places Out Of Direct Sunlight. Incompatible With Dishwashers.

The Ohitsu Is Manufactured By Yamacoh Co., Ltd., Which Was Founded In 1972 In Nakatsugawa, Gifu, Japan. During The Edo Period (1603–1868), The City Was A Post Town Between Edo (Tokyo) And Kyoto. Yamacoh Co., Ltd. Has Been Making Traditional Japanese Cooking Tools Since Its Foundation, And The Ohitsu Is One Of Its Best-Selling Products.
