It Features A Double Edged Blade With An Asymmetric Bevel 80/20, And Molybdenum Stainless Steel Provides Excellent Rust-Resistance. To Care For The Knife, Simply Hand Wash It. This High-Quality Knife Is Made By Traditional Knife-Maker Jikko, Also Known As Sakai Jikko. Established In 1901 In Sakai City, Japan, The Company Has Been Forging Knives For Generations. Sakai Blacksmiths Are World-Renowned For Their Quality Kitchen Knives And Are Believed To Supply Nearly 90 Percent Of The Knives Used By Professional Chefs In Japan.
