The Takobiki Knife Is A Traditional Japanese Kitchen Blade Made With Extraordinary Skill And Precision By The Renowned Knife-Maker Jikko. This Single-Edged Blade Is Created From A Single Piece Of Shirogami High-Carbon Steel, With A Mirror Finish And An Ergonomic Magnolia Handle With Buffalo Horn Bolster. The Shirogami Steel Used For This Knife Is Produced With The Iron Sands Of Yasugi By Hitachi Metals Yasugi Works In Shimane, Japan. The Takobiki Knife Is Longer And Thinner Than A Yanagiba Knife And Is Used To Slice Boneless Fish Fillets Into Sashimi, Particularly In The Kanto Region. It Is A Reactive Carbon Steel Knife, And Requires Special Care And Maintenance To Keep It In Top Condition. For Best Results, Keep The Blade Dry When Not In Use. Jikko Was Founded In 1901 In Sakai City, Osaka, The Capital Of Japan'S Samurai Sword Manufacturing Since The 14Th Century. It Is Renowned For Its High-Quality Kitchen Knives, And Is Believed To Supply Nearly 90 Percent Of The Knives Used By Professional Chefs In Japan. The Company Is Currently Headed By Toshiyuki Jikko, The Fourth Owner And President, And Employs Six Craftsmen.
