The Ohitsu Is A Wooden Container With A Lid Designed To Store Steamed Rice From A Rice Cooker And Keep It Fresh And Non-Sticky. It Is Made Of Sawara Wood From The Kiso Region, A Natural Material That Is Renowned For Its Use In Traditional Japanese Kitchenware Such As Hangiri (Handai) And Ohitsu. Sawara Wood Is Highly Resistant To Water, Durable And Possesses Natural Antibacterial Properties. The Lid Of The Ohitsu Has Two Distinct Shapes: Edobitsu And Nosebitsu. The Edobitsu Has A Flat Lid, While The Nosebitsu Has A Curved Lid. The Ohitsu Has A Distinctive Masame (Straight-Grain) Pattern, With Copper Ornamentation To Give It A Sophisticated Appearance. To Keep The Ohitsu In Good Condition, It Must Be Washed Thoroughly After Each Use To Remove Any Food Residue Which May Cause Black Stains. The Container Should Then Be Wiped With A Dry Cloth And Dried In A Cool, Well-Ventilated Area Away From Direct Sunlight. If The Ohitsu Is Not Dried Properly, The Wood Can Quickly Shrink, Leading To Cracks And Looseness Of The Copper Ornamentation. Sometimes, Resin May Ooze Out On The Surface, But This Is A Natural Ingredient And Not Harmful. Vinegar Or Ethanol Liquid Can Be Used To Remove The Stickiness, Although Some Yellow Stains May Remain.
