The Blade Is Hand-Forged From A Single Piece Of Shirogami High Carbon Steel, A Type Of Yasugi Specialty Steel, Requiring Extraordinary Skill. The Magnolia Handle With Buffalo Horn On The Bolster Is Hand-Made By Skilled Craftmen To Ensure A Comfortable Grip. To Ensure The Longevity Of The Knife, It Is Important To Keep It Dry And Free From Moisture. The Production Of These Quality Knives Is Deeply Rooted In The Centuries-Old Tradition Of The Artisans Of Sakai City. Traditional Knife-Maker Jikko, Also Known As Sakai Jikko, Was Established In 1901 And Is Now Run By The Fourth Generation Of The Family. The Blacksmiths Of Sakai Are Renowned For Their Quality Kitchen Knives, Believed To Account For Around 90% Of The Knives Used By Professional Chefs In Japan.
