Leaving Your Knife Wet Or Exposed To Moisture Can Cause It To Rust Or Discolor. Jikko Knives Have Been Made By The Sakai Blacksmiths Since 1901. The City Is Known For Its Artisans Forging Knives Over The Centuries And Supplying Nearly 90 Percent Of The Knives Used By Professional Chefs In Japan. At Present, There Are Six Craftsmen At The Company, Including Toshiyuki Jikko, The Young President Of The Fourth Generation Family-Owned Artisan Company.
