Making Ikayaki At Home

Making Ikayaki (A Popular Squid Pancake Mainly From The Kansai Region In Japan) At Home Is Now Possible With The Help Of Nambu Cast Ironware. The Cast Ironware Has Been Designated As A Traditional Craftwork In 1975 And Is Produced In Morioka City And Mizusawa, Oshu City. The Nambu Clan, Who Built Morioka Castle About 400 Years Ago, Developed This Craftwork, Making Use Of The Local Materials Such As Iron Sand, River Sand, Clay, Lacquer, Charcoal, Etc.

Before First Use

To Ensure The Best Results When Making Ikayaki, It'S Important To Apply Oil To Nambu Cast Ironware Before First Use. This Will Form A Thin Layer Of Oil That Will Prevent The Surface From Getting Burnt Or Rusty. Here Are The Steps You Should Take Before Using Your Cast Ironware For The First Time:

  1. Wash The Pan Well And Remove Any Dirt On The Surface.
  2. Turn On Low To Middle Heat To Evaporate Any Water Left.
  3. Apply A Thin Layer Of Oil And Then Stir-Fry Some Vegetable Scraps So That The Oil Coats The Entire Surface.
  4. Once The Vegetables Are Cooked, Turn Off The Heat And Take Them Out.
  5. After The Pan Cools Down, Wash It With Scourer Or Brush In Water And It'S Ready To Use!
